Vegan Caesar Dressing (Recipe)

Utilizing the unique creaminess of hemp seeds in combination with plant-food salty elements like capers, and the natural acidity of lemon, lends itself to a truly dupe worthy caesar dressing, with all the no-guilt benefits of added protein and essential omega fatty acids. Even your most carnivorous friends will be coming back for seconds!



Ingredients


Serves 6

  • 1 large lemon, zested and juiced

  • 1 tablespoon capers in brine, plus 1 tablespoon reserved brine

  • 3 tablespoons hulled hemp seeds

  • 2 teaspoons dijon mustard

  • 1 tablespoon extra-virgin olive oil

  • 1/2 teaspoon kosher salt + pepper cracked from mill to taste

  • pinch of calabrian chili flakes (optional)

  • 3 cloves peeled garlic



To Prepare


  1. Using a single-serve or handheld blender with appropriate jar, whisk together lemon zest and juice, caper brine, olive oil, and dijon mustard

  2. Add the remaining ingredients to the liquid mixture and blend until fully immersed, adding a small amount of filtered water if a thinner consistency is desired

  3. Serve with your favorite greens, or drizzle into a wrap for a fun twist on lunch!
